Cloud Bread Using Baking Powder. Baking powder contains both an acid (cream of tartar) and a base (sodium bicarbonate) that interact with each other with the introduction of water, creating carbon dioxide bubbles that make bread rise. Using the cloud bread recipe from Tasty as inspiration, I decided to try out a few different versions, a version with cream cheese and one with Greek yogurt and I've used cream of tartar as well as baking powder to see if there was any difference.

Baking powder causes a chemical reaction.
Baking Powder is used in batters where there is no acid present, such as in: cookies, cakes, pastries, pies, quick bread, etc.
Although both baking powder and yeast are ingredients often used in baking, they aren't the same. Baking powder, an inert mixture used as a chemical leavening agent, increases the volume and lightens the texture of baked goods. Whip egg whites together with salt (and cream of tartar, if you are using any) until very stiff Place two dollops of the mixture per serving on a paper-lined baking tray.
